Ingredients
- 3 large sweet potatoes, cubed
- 3 tbsp gochujang
- 2 tbsp maple syrup
- 1 tbsp sesame oil
- 1 tbsp rice vinegar
- Sesame seeds
- Scallions, sliced
- Flaky salt
Instructions
- Preheat oven to 400°F. Toss sweet potatoes with olive oil and salt, roast 20 minutes.
- Mix gochujang, maple syrup, sesame oil, and rice vinegar.
- Pour glaze over potatoes, toss to coat, roast another 15 minutes until sticky and caramelized.
- Top with sesame seeds, scallions, and flaky salt.
