Nourishing Beef bone broth

Ingredients to gather
2 bay leaves
2 teaspoons of black peppercorns
1 large red onion quartered with skin on
2 large carrots cut in half
3 prime rib bones (~1lbs) with left over meat attached
6 cups of water
Kosher Salt to taste - at least 2 tablespoons
Instructions to follow
1. In dutch oven, thinly coat pan with high heat oil (coconut, vegetable, etc) on medium-high heat
2. Salt and pepper the meaty rib bones (skip if bones don’t have enough meat on them)
3. When oil is shimmering or hot, sear meat on bones. If your bones don’t have enough meat on them skip this part.
4. Cover bones with ~6 cups of water, add 2 bay leaves, 2 teaspoons of peppercorns, 1 large onion, 2 large carrots
5. Wait until boiling, then turn down to simmer, simmer for at least an hour.
6. Taste - add salt if not flavorful enough. Then stir and wait 10 mins. Taste again. If too salty, add lemon juice or tiny splash of vinegar.
