Gochujang-Glazed Sweet Potatoes with Sesame & Scallions

I roasted sweet potatoes every week for a month straight before I hit this combination. The gochujang glaze gets sticky and caramelized in the oven, and the sesame-scallion topping makes it.

Ingredients

  • 3 large sweet potatoes, cubed
  • 3 tbsp gochujang
  • 2 tbsp maple syrup
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • Sesame seeds
  • Scallions, sliced
  • Flaky salt

Method

  1. 1 Preheat oven to 400°F. Toss sweet potatoes with olive oil and salt, roast 20 minutes.
  2. 2 Mix gochujang, maple syrup, sesame oil, and rice vinegar.
  3. 3 Pour glaze over potatoes, toss to coat, roast another 15 minutes until sticky and caramelized.
  4. 4 Top with sesame seeds, scallions, and flaky salt.
